This dalmatian is one of the most recognizable breeds because of their unique black and white spotted coat. Representing the bold colors, I would color the black spots with a deep black, and the white spots in a brilliant white. I would also bring out the depths of the sheer lines of the fur by using a crimson red to outline and color the fur, for a realistic effect. For the eyes and nose, use a dark brown to make them stand out against the black and white of the fur. The tongue could be colored in a light pink to increase the realism and bring out the colors in the fur. For the background, use shades of blue, grey and white to create a bright and dynamic look to align with the almost regal look of the dalmatian.
